Skip the queso, swap for salsa. It might sound un-Texan, but that cheesy liquid gold isn’t going to help your waistline. Salsa, on the other hand, is full of flavor and light on calories. Enjoy as a topping on meat or with baked chips.


Veg out. There are so many great veggies with Mexican flair. Tomatoes, peppers, onions, cilantro, and jicama are all tasty veggies to fill up on.


Go for corn, leave out the flour. Your choice of tortillas can save you loads of calories and fat. Corn tortillas are the best choice, followed by flour, and then crunchy.


Fill up on fiber. Add fiber rich foods like sweet potato and black beans to your dishes. These will fill you up without adding much fat and calories.


Skip the alcohol, but stay hydrated. Margaritas are a Cinco de Mayo staple, but they are loaded with sugar and calories. If you must imbibe, go for fresh lime juice and tequila. Or just enjoy lime infused ice water.


Consider seafood. Beef is central to Mexican food, but they are generally high fat cuts. Instead, have shrimp ceviche or tilapia tacos. Seafood is lighter and can be just as tasty.


Watch your toppings. High calorie toppings like cheese and sour cream can mess up a perfectly balanced meal. Go light on the condiments. You won’t sacrifice flavor or your diet.


No soup for you! (Actually, go with soup.)- Gazpacho, a salsa style soup is a cold dish that’s perfect for warm weather. If you’re in a cooler environment, tortilla soup can be loaded with veggies for a filling and healthy main dish.
